PIOTREK’S PERFECT PONIEDZIALEK

Good evening, everyone!

Welcome to ”Piotrek’s Perfect Poniedzialek”!
I am sure, you’re wondering about the name of my blog, but I can explain it:
Monday in Polish is – Poniedzialek. Ta da! Now, it makes sense.
When we came up with the new blog concept, I had the working title ”Piot’s Kitchen Help”. I don’t know why food & cooking was the first thing to pop up in my head, but since I’m not a chef, I will limit my tales about my cooking adventures. I promise that my next blog will be music-related.
For now though, you will have to live with the new cake recipe, someone has recommended to me:
KIRSCH-STREUSEL KUCHEN (CHERRY CRISP CAKE)

Ingredients:
120 g – sugar (I used brown sugar)200 g – butter (+ 20 g to fatten the baking form)1 pcs – egg350 g – flour1 teaspoon – baking powder1 glass – sour cherrys1 pck – Tortenguss (in English – glaze)1 pck – vanilla sugara little bit – cynamon4 soup spoons – flour for the crispy dough

How to make it:
Den Zucker, das Ei und die Margarine mit dem Handrühgerät oder in der Küchenmaschine schaumig verrühren. Dann das gesiebte Mehl, vermischt mit dem Teelöffel Backpulver, nach und nach einrühren, bis ein relativ fester Knetteig entsteht (Tipp: Falls man mit dem Handrührgerät arbeitet, sollte man zu Beginn der Mehlbeigabe die Knethaken einsetzen – sollte der Teig noch zu sehr am Finger kleben, etwas mehr Mehl hinzugeben). Fetten Sie eine 26er Springform gut ein und bedecken Sie den Boden und die Wand der Form dünn mit ca. der Hälfte des Teiges, der Rand sollte etwa 2-3 fingerbreit hoch sein.
As you see the recipe is in German, but I will go through it with you, step by step.
Let’s do it!

1. Mix the sugar, egg and butter together with a handmixer until the mixture is smooth and foamy.
I did exactly what the recipe said and I got this:

It didn’t look smooth nor foamy to me. A bit frustrated and scared, I carried on:
2. Mix the flour and the baking powder and add it gradually to the bowl. (TIP: if you feel that the dough is too sticky in the end, just add some more flour)
Lucky for me, the dough looked really fine after I had added the flour!
I forgot to take a picture though.

3. Fatten a 26 cm baking form with a little blob of butter and use approximately half of the dough to cover the bottom. The walls of the cake should be 2-3 fingers high.

Die Kirschen durch ein Sieb abschütten, den Saft dabei auffangen. Den Tortenguss nach Packungsangabe mit 250 ml des Kirschsaftes zubereiten – evtl. etwas weniger Saft nehmen, denn der Guss sollte nicht zu flüssig sein (wer mag, kann noch etwas Kirschwasser hinzugeben, aber das ist bekanntlich Geschmackssache). Nach kurzen Aufkochen des Tortengusses die Kirschen hinzugeben und kurz etwas erkalten lassen, damit die Masse etwas fester wird und danach gleich in die Backform füllen.

Now it is time to work with the cherrys. You are about to make the filling of the cake. The source, the heart! Wow!
4. Put the cherrys into a sieve and catch all the juice in a glass. Use 250 ml of the juice for the glaze (Tortenguss). You should find the instructions on the package. Fill the finished cherry ’sweetness’ into the form.

Or, I can explain quickly: The glaze is some kind of powder, which you have to mix with 250 ml of the cherry juice and 2 soup spoons of sugar. Heat it up until it starts to boil and then add the cherrys. Remember to stir it the whole time. With the cherrys inside, let it boil and bubble for 1 minute and then let it cool off a couple of minutes. It will make the mixture a bit less liquid.

Zwischenzeitlich den Backofen auf 175°C vorheizen.

5. Meanwhile pre-heat the oven to 175°C.

Die restliche Hälfte des Teiges mit 3 bis 4 EL Mehl, 1 Pck. Vanillezucker und Zimt zu einem krümeligen Streuselteig verarbeiten. Die Kirschmasse vollkommen deckend damit bestreuen.

6. Add 3-4 spoons of flour, 1 package of vanilla sugar and some cinammon to the second half of the dough and MIX, MIX, MIX! Now cover the whole cake with the new crumbly dough.
Done! Now the cake is ready for baking:

Im heißen Backofen auf der mittleren Schiene ca. 50-60 Minuten backen. Der Kuchen ist fertig, wenn Streusel und Rand eine goldbraune Färbung angenommen haben. Zum Servieren mit Puderzucker bestreuen.

7. Bake the cake in the middle of the oven for 50-60 minutes. It is ready, when the crumbly surface and the walls are golden brown. After baking, put some powdered sugar on top. 

Generell schmeckt der Kirsch-Streusel am besten, wenn er entweder noch leicht lauwarm serviert wird oder einen Tag gründlich durchziehen kann.
Ein schneller, einfacher und vor allem preiswerter Streuselkuchen mit Kirschfüllung, der perfekte Kuchen für Backanfanger.
They say it is best to serve the cake when it’s still a bit warm. I have to agree with that. I served it with some creme fraiche and it fit perfectly! This is supposed to be a good recipe for cake-baking-beginners. Agreed!
